Eco tip for the third week of April

Now is the perfect time for spring fruits and vegetables. What are your favourites? One of mine is rhubarb. For a simple, delicious and healthy sweet snack or pud, try braising some fresh rhubarb with a few dates, or for a more substantive dish, make a crumble. I often make a big batch of crumble which I store raw in the freezer. It remains free flowing and can be spooned on top of any fruit before baking in a hot oven. Use your favourite crumble recipe. Mine is:

  • 250g butter, rubbed into
  • 400g plain flour
  • add 150g sugar

Be warned, it's not overly sweet - other recipes suggest up to 250g of sugar, but if the fruit layer is already sweet, I think it's fine.
